Scottish Salmon Trout - Superior Grade

My partner in Scotland may have an opportunity to offer some Superior Salmon-trout over this Summer (June-August). 

Quality is extraordinary. Our Steelhead is farmed in brackish water in Scottish Loch (Northern Scotland). Fish is triploid (sterile, no roes) with a top red color (minimum 28-29 on Salmofan) and a very firm meat structure, which is ideal for cold-smoking or other re-processing activities.
